Spring is coming!

With springtime just around the corner, what are some things that remind you of this wonderful time of the year?

Just to name a few…

  • Blackberry bushes blooming

  • Flowers blooming

  • Birds building their nests for their little offspring that will coming soon

  • Planting a garden

  • Planting pretty flowers

  • Airing out the house to let in the fresh clean air of springtime…

  • Coconut cake, usually a bunny cake for Easter…But this is a wonderful substitute until Easter-time…

Piña Colada Cupcakes

Pineapple, coconut and rum create a tropical paradise of flavor in frosted easy-mix cupcakes.

Prep Time:20 min

Start to Finish:1 hr 50 min

Makes:24 cupcakes

1 box Betty Crocker® SuperMoist® yellow cake mix
1/3 cup vegetable oil
1/4 cup water
1 teaspoon rum extract
1 can (8 oz) crushed pineapple in juice, undrained
3 eggs
1 teaspoon coconut extract
1 teaspoon rum extract
1 container (12 oz) Betty Crocker® Whipped vanilla frosting
3/4 cup shredded coconut

1. Heat oven to 375°F (350°F for dark or nonstick pan). Place paper baking cup in each of 24 regular-size muffin cups. In large bowl, beat cake mix, oil, water, 1 teaspoon rum extract, the pineapple and eggs with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Divide batter evenly among muffin cups.
2. Bake 14 to 19 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 30 minutes.
3. Stir coconut extract and 1 teaspoon rum extract into frosting. Spread frosting on cupcakes. Dip tops of frosted cupcakes in coconut. Store loosely covered at room temperature.Copyright-Betty Crocker.com

Friday’s Outfit

Pink, black, white and lime striped sweater and black skirt…

 

Today’s Friday! I’m sure a whole bunch of you ladies are out shopping now….Friday is pay-day for most people, so that’s the time to shop, run errands and such.

My husband works for himself and has sporadic pay-days…So we just shop when we need things and sometimes that is too often…lol For instance yesterday we had to go FOUR times to FOUR different places…That’s is so unorganized isn’t it?? Well two times was for horse feed. The store we buy from was out of some things we needed, so we had to go to another store. We also had to make a short run to the Dollar General and my husband bought some shrimp and crab on the spur of the moment from a roadside vendor…I wasn’t thinking and didn’t remember at the time that I was out of Crab Boil…Oh my! so I had my potatoes boiling and remembered that I had used the last little bit a few weeks ago! We had to run to the store before it closed and leave our son watching the boiling pot…

I bought four bottles!

The shrimp were good, we saved the crabs for later….I also saved some shrimp for salads today for lunch and have more to go in some “Shrimp Gumbo“…later this week. My meal plans do change from time to time, and that’s okay! It’s not written in stone…LOL

I must be about and get lunch prepared and get busy on some scrumptious, as well as routine things I had planned for today!
