Seasonings and other ingredients: Tomatoes from the freezer, bell peppers from the freezer, onions, bay leaves, oregano from my herb bed, salt, pepper and garlic powder. Served over organic rice. Cost, approximately $2.00

    Your dinner looks delicious and not being expensive is a plus! Did you use canned red beans? I love beans but I’m having trouble finding ways to prepare them so my husband doesn’t mind. So far, I can make chile beans once in awhile. Your menus always sound so delicous!

  2. Thank you! I use dry red beans (a 1# package ususally)…they cost approx. $1.00. I don’t guess it would hurt to use canned beans if you can find them on sale for 2 or 3 for $1.00. I’ll post about how to make them using canned beans.

  3. Thank you so much for the recipe! I usually use dried beans also, so it won’t be a problem. Hubby said he doesn’t feel like beans just now, so I will have to wait a bit. Can’t wait to try it!
