BIG WHITE LIMA BEANS
1 pkg. Large white Lima’s
1 medium onion (I leave mine whole, just peel)
1/2-1 lb smoked ham, cubed…you can substitute sausage, smoked ham hocks, I have even made them with no meat-just a couple or 3 tablespoons of olive oil…
salt to taste
black pepper, opt.
Rinse beans, place in dutch oven/similar size pot that is about 1/2 full of water…
cut up meat and place in pot peel onion, place in pot…you can cut it up if desired, my boys won’t eat it if it has pieces of onion, so I leave it whole and it just gives the oniony flavor…salt, and pepper….let come to boil on med high-high, lower temp to medium to simmer, cover, let cook for an hour and a half….taste test to see when beans are tender and ready…and the “gravy” has thickened a bit…sometimes I add a little cornstarch mixed in cold water to the beans to thicken right before serving…simple enough…
Cook a pot of rice.
Serve beans over rice with cornbread on the side, and sweet iced tea (of course)!!!
